Uthappam

Ingredients:

  • 1 cup of idli batter
  • 1 small onion, chopped
  • 1 small tomato, chopped
  • 1 green chili, chopped
  • 1 handful of chopped cilantro
  • 1/4 teaspoon of cumin seeds
  • Salt, to taste
  • Oil, for cooking

Instructions:

  1. Mix the idli batter with the chopped onion, tomato, green chili, cilantro, cumin seeds, and salt in a large bowl.
  2. Heat a non-stick pan over medium heat and add a few drops of oil.
  3. Pour a spoonful of the batter onto the pan and spread it out into a thin pancake, about 6-8 inches in diameter.
  4. Drizzle some oil around the edges of the pancake and let it cook until the bottom is golden brown, about 2-3 minutes.
  5. Flip the pancake and let it cook until the other side is golden brown, about another 2-3 minutes.
  6. Repeat with the remaining batter, adding more oil as needed.
  7. Serve hot with coconut chutney or any other condiment of your choice.
