Ingredients:
- 1 block of firm tofu, drained and pressed
- 1 small head of broccoli, cut into florets
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves of garlic, minced
- 1 inch piece of ginger, minced
- 2 tablespoons of vegetable oil
- 2 tablespoons of soy sauce
- 1 tablespoon of rice vinegar
- 1 teaspoon of sesame oil
- 1 teaspoon of sugar
- Salt and pepper, to taste
Instructions:
- Cut the tofu into small cubes and set it aside.
- In a wok or large pan, heat the vegetable oil over high heat. Add the tofu and cook for about 3-4 minutes, or until it is golden brown and crispy.
- Remove the tofu from the pan and set it aside.
- In the same pan, add the broccoli, bell pepper, onion, garlic, and ginger and stir-fry for 3-4 minutes or until the vegetables are tender.
- In a small bowl, mix together the soy sauce, rice vinegar, sesame oil, sugar, salt, and pepper to make the sauce.
- Add the sauce to the pan with the vegetables and toss to coat.
- Add the crispy tofu back into the pan and toss to combine.
- Serve over steamed rice or noodles.
