Dosa

One popular South Indian dish is dosa, a type of crepe made from fermented rice and lentils. Here is a simple recipe for making dosa at home:

Ingredients:

  • 1 cup urad dal (split black lentils)
  • 4 cups parboiled rice
  • Salt, to taste
  • Oil, for cooking

Instructions:

  1. Soak the urad dal and rice separately in water for at least 4 hours. Drain and grind the dal to a smooth batter, then add the ground rice and continue to grind until the batter is smooth and fluffy.
  2. Add salt to taste and mix well. Cover and let the batter ferment for at least 8 hours or overnight.
  3. Heat a non-stick griddle or skillet over medium heat. Ladle some batter onto the griddle and spread it out into a thin, circular shape.
  4. Drizzle some oil around the edges and cook until the dosa is golden brown and crispy, about 2-3 minutes.
  5. Flip the dosa and cook the other side for an additional 1-2 minutes.
  6. Serve hot with chutney or sambar.
