Stir-Fried Vegetables with Tofu

Looking for a delicious and healthy Asian-inspired vegetarian recipe? Look no further than this easy and flavorful dish of stir-fried vegetables and tofu in a savory sauce!

Ingredients:

  • 1 block of firm tofu, drained and pressed
  • 1 small head of broccoli, cut into florets
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves of garlic, minced
  • 1 inch piece of ginger, minced
  • 2 tablespoons of vegetable oil
  • 2 tablespoons of soy sauce
  • 1 tablespoon of rice vinegar
  • 1 teaspoon of sesame oil
  • 1 teaspoon of sugar
  • Salt and pepper, to taste

Instructions:

  1. Cut the tofu into small cubes and set it aside.
  2. In a wok or large pan, heat the vegetable oil over high heat. Add the tofu and cook for about 3-4 minutes, or until it is golden brown and crispy.
  3. Remove the tofu from the pan and set it aside.
  4. In the same pan, add the broccoli, bell pepper, onion, garlic, and ginger and stir-fry for 3-4 minutes or until the vegetables are tender.
  5. In a small bowl, mix together the soy sauce, rice vinegar, sesame oil, sugar, salt, and pepper to make the sauce.
  6. Add the sauce to the pan with the vegetables and toss to coat.
  7. Add the crispy tofu back into the pan and toss to combine.
  8. Serve over steamed rice or noodles.

This dish is bursting with flavor and is a great way to get your daily dose of veggies. The crispy tofu adds a nice texture contrast and packs a punch of protein. You can also add a sprinkle of sesame seeds, scallions or cilantro to add more of an Asian flair. Enjoy!
